Cucumber Mango Salsa

 


These happy, real food colors make me want to danceeeee.

After I made this salsa I put it on pretty much anything I ate for dinner for the next three days and it was d e l i c i o u s - the flavors only got better as the days went by- so feel free to prep this a day in advance.

This salsa is great for eating as a dip with tortilla chips (my favorite are Seite ) or as a topping to bring some tropical vibrance to any protein/ some tacos!

Cucumber Mango Salsa

prep time: 15 | Servings: 4-6

Ingredients:

  • 2 mangos, peeled and small diced ⁣
  • ½ cucumber, peeled and small diced ⁣
  • ½ red onion, small dice ⁣
  • ¼ pineapple, peeled and small diced ⁣
  • 2 limes, zested and juiced ⁣
  • 1 green onion stem, sliced ⁣
  • Handful cilantro, chopped ⁣
  • Himalayan salt to taste

Instructions:

  1. Prep all ingredients and combine in a mixing bowl, tossing around to incorporate flavors.
  2. Test taste and add salt to your liking, you want this salsa to be refreshingly sweet yet acidic!
