Vegan Nut Free Parmesan

I was obsessed with Caesar Salad as a child. Probably because it was a salad that was smothered in cheese and croutons haha, but none the less, a favorite. Because of this, I wanted to create a dairy-free parmesan to enjoy with all the Caesar salads to come.

On another note- I probably consume way too many cashews in some way or another...also almonds...also coconuts....also Brazil nuts...and pecans....it’s fine. But if you can’t have nuts, or like me should probably break from them when you can? This recipe is perfect.

Vegan Nut Free Parmesan

prep time: 10 Servings: 6-8

Ingredients:

  • 1/2 cup raw sunflower seeds
  • 2 tsp lemon zest
  • 2 Tbsp nutritional yeast
  • ½ tsp garlic granules
  • 1-2 lemons, juiced
  • salt

Instructions:

  1. In a high speed blender or small food processor, combine all ingredients except for lemon juice and blend until powdery.
  2. Slowly add in lemon juice- enough to start to chunk up mixture. > 3. Taste and adjust seasonings/ lemon juice accordingly
