Winter Citrus Salad

 
 

Grateful to live in a state where “winter” is a hiccup long and just visits for a couple of days on occasion.

That being said- this “citrusy winter salad” is perfect for the Sunshine state. It’s light, crisp, refreshing, and has unreal amounts of color. It’s also great for if you’re starting to feel a little under the weather. It’s a fun way to get in your vitamin C!

Winter Citrus Salad

prep time: 20 | Servings: 2

Ingredients:

  • 1 sectioned or sliced pink grapefruit
  • 1 sectioned or sliced naval orange
  • 1 sectioned or sliced blood orange
  • 1 sectioned or sliced tangerine
  • 1 thinly sliced red onion
  • ¼ cup pomegranate seeds
  • ¼ cup walnuts (or nut of choice)
  • freshly sliced mint
  • 2 tbs olive oil
  • 2 tbs lemon juice
  • pink salt to taste
  • OPTIONAL: drizzle of Manuka honey

Instructions:

  1. Gently toss all ingredients together in a bowl, adjust seasonings accordingly and plate. Feel free to eat these over a bed of greens or add avocado for a nutrient dense boost
