Hearts of Palm Ceviche + a feature on FitLivingEats!

 

It’s my true joy to share that this Wednesday, 5/6/20, at 6pm EST I’ll be over on my fellow chef friend Carly’s Instagram, @fitlivingeats doing a cooking IG LIVE! Carly has just launched “The Collective” a space to feature some of her favorite chefs + wellness entrepreneurs so that they can share their expertise with us all through healthy recipes, curated content and cooking demos. She is such a supportive and community-driven spirit and I am so honored to be the first in what I know will be such a successful series! ⁣

Together we will be making one of my favorite plant-based recipes: hearts of palm ceviche! I’ve made this dish for a women’s wellness retreat, for countless meals with sweet friends, and of course, as a tasty snack- it’s a tried and true favorite. You can enjoy this ceviche with crisp tortilla chips, on a seared tortilla as a taco or even as a crunchy tostada (If you haven’t tried Siete Foods products yet, now is absolutely the time my friends). I think one of the reasons why I love ceviche so much, aside from its incredible flavors is how comforting it feels to me. Some of my favorite memories are tied to this dish, like being back home in Puerto Rico, surrounded by family and sea breeze. Or the trips we’ve taken to Mexico. I distinctly remember a tiny shack on the beach in Cozumel serving up some of the freshest, most delicious ceviche I have ever had. When something that already tastes that good makes you FEEL that good, it’s bound to become a favorite.

Hearts of Palm Ceviche

prep time: 10-15 minutes | Servings: 2-4

Ingredients:

  • 15-ounce can hearts of palm, drained
  • ¼ red onion, finely diced
  • ¼ red pepper, finely diced
  • 1 roma tomato, finely diced
  • 1 green onion, thinly sliced
  • 2 tablespoons cilantro, chopped
  • 2 limes, juiced
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt to taste

Instructions:

  1. Prep all ingredients and add to a bowl, tossing to combine.
  2. Serve with tortilla chips or turn it into a full meal by searing tortillas and enjoying as a taco with black beans and avocado slices.
