Scallion pancakes (GF, VEGAN, PALEO, AIP)

 

Things that I have been seeing all over the place in this quarantine thus causing me to make them: pasta dishes (truly any kind really), fresh-baked bread, sourdough (in the works as we speak), sticky buns (bless you Bon Appetit Magazine) and now, SCALLION PANCAKES.

Growing up Puerto Rican, Bacalaitos, or cod fritters have long been one of my favorite and most cherished snacks. They do vary though, some people enjoy them loaded with fish, fried thick and fluffy, or vice versa, thin and crisp with hardly any codfish in them at all (the second is me all the way). I never thought that making vegan, gluten-free, and paleo scallion pancakes would be the answer to my “I’ll take 90% crisp batter and 10% or less fish please” ways. They also reminded me of Latkes, another dish I am fond of. These kind of feel like a magical middle between the two to be honest. Please just try these and I promise you will feel joy.

Scallion Pancakes (GF, V, PALEO, AIP)

Ingredients:

  • 1/2 cup + 2 tbs cassava flour
  • 4 scallions or green onions, thinly sliced
  • 3 tbs arrowroot powder (and some for your work surface)
  • 1/8 tsp baking soda
  • 1/2 cup warm water
  • 2 tbs avocado oil (you'll need extra for frying)
  • 1 tsp apple cider vinegar
  • 1/2 tsp himalayan salt

Instructions:

  1. Using a large bowl, mix together all dry ingredients (not the scallionsjust yet) until combined.
  2. Slowly pour the warm water into your dry mix and stir well to form a dough, it wont be perfectly smoothe. Pour in the oil and apple cider vinegar and mix.
  3. Gently fold in your scallions until well incorporated.
  4. On a clean surface, dust some arrowroot powder.
  5. Divide the dough into little balls. Use a rolling pin or your hands, form the dough balls into round, thin pancakes. You can determine the thickness, it's a preference, I like mine somewhere in the middle of thick and thin.
  6. In a large cast iron or pan, pour enough avocado oil to cover the bottom and place on medium heat.
  7. One at a time, fry the pancakes for about 2-3 minutes on each side, or until golden brown and delicious.
  8. Pair with your favorite dips of choice, I love treating them similary to latkes and smearing some Labneh or crème fraîche on top!
