Peanut Butter Chocolate Chip Cookies

 

Does Christmas just mean cookie season to me, anyone else? (Aside from you know, Holiday cheer and time with loved ones and what not)

I feel like despite the pace of this year- the Navidades still managed to sneak up on me and leave me feeling like there is not nearly enough time to make all of the cookies that I want to. Maybe this means next year i’ll just start baking cookies in September?

One of my favorite Holiday cookies growing up has always been those peanut butter cookies with the chocolate kisses in the center. Wanting to get that same flavor profile, these little beauties came to be. They’re fluffy, tender, gooey, all the good stuff rolled into one cookie.

Peanut Butter Chocolate Chip Cookies

prep time: 10 | cook time: 14 | Servings: 8-12

Ingredients:

  • 3 Tbs aquafaba (you can use 1 egg as a replacement)
  • 1/4 c maple syrup
  • 1 c unsalted peanut butter
  • 2 tbs coconut sugar (can sub with more maple syrup)
  • 1 tsp vanilla extract
  • 3/4 c almond flour
  • 1/4 tsp baking soda
  • 1/2 c semi- sweet chocolate chips
  • small pinch of himalayan salt

Instructions:

  1. Preheat oven to 325 degrees F.
  2. Whisk together aquafaba, peanut butter, vanilla extract maple syrup, and coconut sugar until smooth in consistency.
  3. Fold in dry ingredients (including chocolate chips) and mix thoroughly.
  4. Scoop dough out into little balls and flatten them gently to create your cookies.
  5. Bake for 12-14 minutes, I like slightly underbake mine so they're more doughy in the center.
  6. Allow to cool and enjoy!
