Purple Cabbage Slaw

 
 

Beautiful, raw, BRIGHT food, how can you not be about a dish like this? These colors are unreal! I am a huge fan of this slaw, it’s a true showcase of how tasty and amazing real food can be. (Also I love slaws...and acidic foods in general) . And can be paired perfectly as a side or topping to so many things, like tacos, which are a life source.

Purple Cabbage Slaw

prep time: 20 minutes | Servings: 6-8

Ingredients:

  • Juice of two limes
  • 2 tbs apple cider vinegar
  • 2 tbs tablespoons olive oil
  • 1 tbs honey or maple syrup for vegan, can also omit either
  • 1 red onion, very thinly sliced
  • 1 purple cabbage, shredded
  • 4 radishes, thinly sliced
  • 1 large carrot, shredded
  • ½ bushel of cilantro, chopped
  • salt to taste
  • optional: coconut shreds

Instructions:

  1. In a large bowl, massage all ingredients together until cabbage is soft. Adjust seasonings accordingly and enjoy!
